T.C. Smith, of Clarksville, Tennessee, spotted a niche market in his town - business folks who needed delicious food delivered to their doorstep. He is the proprietor of the mobile Castaway Canteen and Catering, a business he runs out of a truck. Smith custom-grills a variety of foods, including hand-patted hamburgers, in the 400-square-foot kitchen he operates in Clarksville. He then loads the hot food onto his truck and drives it to the customer's location. In addition to lunch staples, Smith offers a few peculiar dishes. "I've got everything from pigs' feet to purple Gatorade - literally," he told the news source. "We're serious about the quality of food we serve. We keep a very clean truck too." Other specialties listed on his company's website include boiled crawfish, award winning chili, boiled peanuts and pork tenderloin. The chef added that his business is doing well, and he has developed a relationship with several of the manufacturing plants in a nearby industrial park. Many catering companies are faced with the challenge of keeping food hot while hungry diners load up their plates with tasty items.
