Lone Star State chefs keep food hot at barbecue competition |
This Saturday, fans of Tex-Mex cuisine will gather at the 33rd annual Welder's Fiesta Guacamole. For the first time, the event will feature a full-scale barbecue cook-off, with awards given to the tastiest beef brisket, pork spare ribs and chicken halves, according to The Gonzales Inquirer.
Chefs who enter the competition can enlist cooking teams of up to four people. They may only use wood for fuel, so it's likely that many of these dishes will have that delicious smoky flavor that many associate with traditional southern barbecue.
Foodies at the event will also be treated to live performances by DJ Blue and DJ Jimmy'z Jambox, and there will be an evening dance on both nights from 8 p.m. to 1 p.m.
Traditional Mexican fare, such as tamales, fajitas, gorditas and churros will also be available during the festival. Those in the area will be able to attend the event for the low price of $2 during the day and $5 in the evening.
Mexican food is often very spicy, and barbecue dishes are typically served up hot and fresh off the grill. Some may use wire chafing stands, which are an excellent way to keep food hot at outdoor get-togethers.
